A delicious gluten-free twist on the classic Chicken Caesar Salad, this Gluten-Free Chicken Caesar Pasta Salad is perfect for a light and satisfying meal. It's made with gluten-free pasta, tender diced chicken, crisp romaine lettuce, and a flavorful Caesar dressing. Top it with grated Parmesan cheese for an extra layer of flavor!
Ingredients: 8 ounces gluten-free pasta. 2 cups cooked chicken breast, diced. 2 cups romaine lettuce, chopped. 1/2 cup cherry tomatoes, halved. 1/4 cup grated Parmesan cheese optional. 1/4 cup Caesar dressing gluten-free. 2 tablespoons olive oil. 1 clove garlic, minced. 1/2 teaspoon Dijon mustard. 1/2 teaspoon Worcestershire sauce gluten-free. 1/4 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon dried oregano. 1/4 teaspoon dried basil. 1/4 teaspoon dried parsley. 1/4 teaspoon dried thyme.
Instructions: Cook the gluten-free pasta according to package instructions until al dente. Drain and rinse with cold water to cool it down. In a small bowl, whisk together the Caesar dressing, olive oil, minced garlic, Dijon mustard, Worcestershire sauce, salt, black pepper, dried oregano, dried basil, dried parsley, and dried thyme to make the dressing. In a large mixing bowl, combine the cooked pasta, diced chicken, chopped romaine lettuce, and halved cherry tomatoes. Pour the dressing over the salad ingredients and toss everything together until well coated. If desired, sprinkle the grated Parmesan cheese on top of the salad. Chill in the refrigerator for at least 30 minutes before serving. Serve cold and enjoy!
