Ingredients: 1 pound carrots, peeled and cut into sticks. 2 cloves garlic, minced. 1 tablespoon fresh dill, chopped. 1 tablespoon sea salt. Filtered water.
Instructions: In a clean glass jar, layer the carrot sticks, minced garlic, and chopped dill. In a separate container, dissolve the sea salt in filtered water to create a brine. Pour the brine over the carrots in the jar, ensuring they are fully submerged. Cover the jar with a lid loosely to allow gases to escape during fermentation. Let the jar sit at room temperature, out of direct sunlight, for 3-7 days, depending on your desired level of fermentation. Check the carrots daily and press them down to keep them submerged under the brine. Once fermented to your liking, secure the lid tightly and store the jar in the refrigerator.
