Ingredients: 1 sheet puff pastry, thawed. 4 ounces goat cheese, softened. 1/4 cup fig jam. 1 teaspoon fresh rosemary, finely chopped. 1 egg, beaten. Fresh figs, for garnish optional. Honey, for drizzling optional.
Instructions: Preheat the oven to 400F 200C. On a lightly floured surface, roll out the puff pastry into a rectangle. Using a knife, cut the pastry into squares or rectangles, depending on your preference. Transfer the pastry squares onto a baking sheet lined with parchment paper. In a small bowl, mix together the softened goat cheese and chopped rosemary. Spread a layer of fig jam onto each pastry square, leaving a small border around the edges. Top the fig jam with a dollop of the goat cheese mixture. Fold the edges of the pastry squares inward slightly, creating a rustic tart shape. Brush the edges of the tarts with beaten egg for a golden finish. Optional: Slice fresh figs and place them on top of the tarts for garnish.
