The flaky puff pastry shells of these savory hand pies hold a tasty mixture of roasted cauliflower and rosemary pesto. Great as a snack or light meal!
Ingredients: 1 head cauliflower, chopped into small florets. 2 tablespoons olive oil. Salt and pepper to taste. 1 sheet puff pastry, thawed. 1/4 cup pine nuts. 2 cloves garlic, minced. 2 tablespoons fresh rosemary, finely chopped. 1/4 cup grated Parmesan cheese. 1/4 cup olive oil. Salt and pepper to taste.
Instructions: Preheat the oven to 400F 200C. Toss cauliflower florets with 2 tablespoons of olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes until tender and lightly browned. In a small skillet, toast pine nuts over medium heat until golden brown, stirring frequently to prevent burning. Remove from heat and set aside. In a food processor, combine the roasted cauliflower, toasted pine nuts, minced garlic, chopped rosemary, Parmesan cheese, and 1/4 cup olive oil. Pulse until mixture forms a coarse paste. Season with salt and pepper to taste. Roll out the puff pastry on a lightly floured surface. Cut into small squares or circles, depending on your preference for hand pie size. Place a spoonful of the cauliflower pesto mixture onto half of the pastry pieces. Top with the remaining pastry pieces and crimp the edges with a fork to seal. Place the hand pies on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until golden brown and puffed up. Serve warm and enjoy!

There are lots of different colored vegetables, creamy goat cheese, and flaky puff pastry in this Vegetable & Goat Cheese Quiche Tart. The tart's beautiful presentation and delicious taste will make it a hit at brunch, lunch, or a light dinner.
Ingredients: 1 sheet of store-bought puff pastry. 1 tablespoon olive oil. 1 small red onion, thinly sliced. 1 cup mixed vegetables such as bell peppers, zucchini, and cherry tomatoes, diced. 4 large eggs. 1/2 cup heavy cream. 4 ounces goat cheese, crumbled. Salt and pepper to taste. Fresh herbs for garnish optional.
Instructions: Preheat the oven to 375F 190C. Roll out the puff pastry sheet on a lightly floured surface and transfer it to a tart pan, pressing it gently into the bottom and sides. In a skillet, heat the olive oil over medium heat. Add the sliced red onion and cook until softened, about 5 minutes. Add the mixed vegetables to the skillet and cook for another 5 minutes until they are slightly tender. Season with salt and pepper to taste. In a mixing bowl, whisk together the eggs and heavy cream until well combined. Season with salt and pepper. Spread the cooked vegetables evenly over the bottom of the puff pastry crust. Pour the egg mixture over the vegetables, making sure it is evenly distributed. Sprinkle the crumbled goat cheese over the top of the quiche. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the filling is set. Remove from the oven and let it cool for a few minutes before slicing. Garnish with fresh herbs if desired, and serve warm or at room temperature.
