Ingredients: 2 1/4 cups all-purpose flour. 1/2 teaspoon baking powder. 1/2 teaspoon salt. 3/4 cup unsalted butter, softened. 3/4 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. Blue and pink food coloring. 1/2 cup white chocolate chips.
Instructions: Preheat the oven to 350F 175C. In a bowl, whisk together the flour, baking powder, and salt. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Divide the dough into two equal portions. Add blue food coloring to one portion and pink food coloring to the other, kneading until the colors are well distributed and the dough is uniformly colored. Take a small amount of both the blue and pink dough, and roll them into thin ropes of equal length. Place the two ropes side by side and gently twist them together, then shape the twisted ropes into a circle, creating a swirled effect. Place the twisted dough circles on a baking sheet lined with parchment paper. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. In a microwave-safe bowl, melt the white chocolate chips in 20-second intervals, stirring between each interval until smooth and melted. Dip half of each cooled cookie into the melted white chocolate to create a decorative drizzle. Place the cookies back on the parchment paper and allow the chocolate to set. Once the chocolate has hardened, the cookies are ready to serve and reveal!
