This creamy corn dip is a delightful vegan alternative to traditional dairy-based dips. It's packed with flavor and perfect for parties or snacking.
Ingredients: 2 cups corn kernels. 1/2 cup vegan mayonnaise. 1/4 cup nutritional yeast. 1 tablespoon lemon juice. 1/4 teaspoon garlic powder. 1/4 teaspoon onion powder. Salt and pepper to taste. Fresh chopped chives for garnish.
Instructions: Use a blender or food processor to pulse the corn kernels until they are just barely mashed. Put the mashed corn in a bowl for mixing. Nutritional yeast, lemon juice, garlic powder, onion powder, salt, and pepper should all be added. Mix everything together well. Put it in the fridge for at least 30 minutes to mix the flavors. Before serving, sprinkle with chopped fresh chives. Pair it with the crackers or chips of your choice.
