Ingredients: 8 oz lump crab meat. 2 cups mixed greens spinach, arugula, kale. 1/2 cucumber, sliced. 1/2 avocado, diced. 1/4 cup cherry tomatoes, halved. 1/4 cup sliced red bell pepper. 1/4 cup sliced red onion. 2 tbsp extra-virgin olive oil. 1 tbsp fresh lemon juice. 1 tsp Dijon mustard. Salt and pepper to taste.
