A delicious and hearty Keto-friendly chicken curry stew made with coconut milk and a blend of aromatic spices. This comforting dish is packed with protein and low-carb vegetables, perfect for a satisfying meal on a Keto diet.
Ingredients: 1 lb chicken breast, diced. 1 tbsp coconut oil. 1 onion, chopped. 3 cloves garlic, minced. 1 tbsp ginger, minced. 2 tbsp curry powder. 1 tsp turmeric. 1 can 14 oz coconut milk. 2 cups chicken broth. 2 cups cauliflower florets. 1 cup green beans, trimmed. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: Put coconut oil in a big pot and heat it over medium-low heat. Put in the ginger, onion, and garlic. About two to three minutes, or until the food smells good. Salt and pepper should be added along with the diced chicken breast. It will take about 5 to 7 minutes of cooking until the chicken is brown on all sides. Add the chicken broth and coconut milk. Bring to a low boil. Green beans and cauliflower florets should be added. Let it cook on low heat for 15 to 20 minutes, or until the chicken is fully cooked and the vegetables are soft.
