A tasty twist on classic potato skins, these Potato Skin Burgers are loaded with savory toppings and make for a satisfying meal.
Ingredients: 4 large russet potatoes. 1 lb ground beef. 1/2 cup shredded cheddar cheese. 1/4 cup sour cream. 1/4 cup chopped scallions. 1/4 cup cooked bacon bits. 1/4 cup mayonnaise. 2 cloves garlic, minced. Salt and pepper to taste. Vegetable oil for frying.
Instructions: Preheat your oven to 400F 200C. Wash and dry the russet potatoes, then pierce them with a fork several times. Bake the potatoes for about 1 hour or until they are tender. While the potatoes are baking, cook the ground beef in a skillet over medium heat until fully browned. Season with salt and pepper to taste. Cut the cooked potatoes in half lengthwise and scoop out the insides, leaving a thin layer of potato flesh attached to the skin. Brush the potato skins with vegetable oil and bake them for an additional 10 minutes until they become crispy. Fill each potato skin with cooked ground beef, cheddar cheese, and bacon bits. Return them to the oven for 5 minutes or until the cheese is melted. In a small bowl, mix sour cream, mayonnaise, minced garlic, and chopped scallions to make the sauce.
