We call it Fat Tuesday, which is also what Mardi Gras is French for. The next day, February 26th, is the first day of the Lenten season or Ash Wednesday. Mardi Gras refers to events of the Carnival celebration, beginning on or after the Christian feasts of the Epiphany (Three Kings Day) and culminating on the day before Ash Wednesday. Mardi Gras is French for "Fat Tuesday", reflecting the practice of the last night of eating rich, fatty foods before the ritual fasting of the Lenten season. The three colors of the Mardi Gras season represent three important principles. Green represents faith, purple represents justice and gold represents power.
