The Grilled Hummus and Caramelized Onion Sandwich is a tasty vegetarian option that is full of flavor. On grilled bread, sweet caramelized onions, gooey melted cheese, and creamy hummus go together like peanut butter and jelly. You can make it quickly for lunch or dinner and it's easy to do.
Ingredients: 1/2 cup hummus. 1 large onion, thinly sliced. 2 tablespoons olive oil. 4 slices of your favorite bread. 4 slices provolone cheese. Salt and pepper to taste. Fresh parsley for garnish optional.
Instructions: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the thinly sliced onions to the skillet and cook, stirring occasionally, until caramelized, about 15-20 minutes. Season with salt and pepper to taste. Spread hummus evenly on two slices of bread. Layer caramelized onions on top of the hummus on each slice. Place a slice of provolone cheese on each sandwich, and then top with the remaining bread slices. Brush the outsides of the sandwiches with the remaining olive oil. Heat a skillet or grill pan over medium heat. Place the sandwiches in the skillet and cook until golden brown and the cheese is melted, about 3-4 minutes per side. Remove from the skillet and let cool slightly before slicing. Garnish with fresh parsley if desired. Serve and enjoy!
