These grilled portobello mushroom caps are a tasty and filling keto-friendly meal. They are seasoned with thyme and garlic, and then melted provolone cheese is added on top to make them taste even better. This is a great quick and easy vegetarian meal.
Ingredients: 4 large portobello mushroom caps. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon dried thyme. Salt and pepper to taste. 4 slices of provolone cheese. Fresh parsley, chopped, for garnish.
Instructions: Preheat grill to medium-high heat. In a small bowl, mix olive oil, minced garlic, dried thyme, salt, and pepper. Brush both sides of mushroom caps with the olive oil mixture. Place mushroom caps on the grill, gill side down, and grill for 5-7 minutes. Flip the mushroom caps and grill for another 5-7 minutes until tender. During the last 2 minutes of grilling, place a slice of provolone cheese on each mushroom cap to melt. Remove from grill and garnish with chopped parsley before serving.

These Portobello Veggie Burgers are a delicious and hearty vegetarian option for burger lovers. Grilled portobello mushrooms are marinated to perfection and topped with provolone cheese, fresh vegetables, and a flavorful sauce. A healthy and satisfying choice for your next barbecue or meal.
Ingredients: 4 large portobello mushroom caps. 1/4 cup balsamic vinegar. 1/4 cup olive oil. 2 cloves garlic, minced. 1 teaspoon dried oregano. Salt and pepper to taste. 4 whole wheat burger buns. 4 slices of provolone cheese. 1 cup baby spinach leaves. 1 tomato, sliced. 1/4 cup mayonnaise. 2 tablespoons Dijon mustard. 1 tablespoon honey. 1/2 teaspoon smoked paprika.
Instructions: In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, dried oregano, salt, and pepper. Brush the portobello mushroom caps with the marinade and let them marinate for 15-20 minutes, turning occasionally. Preheat your grill to medium-high heat. Grill the marinated portobello mushrooms for about 5-7 minutes per side, or until they are tender and grill marks appear. During the last minute of grilling, place a slice of provolone cheese on each mushroom cap and close the grill to melt the cheese. While the mushrooms are grilling, toast the whole wheat burger buns on the grill until they are lightly browned. In a small bowl, mix mayonnaise, Dijon mustard, honey, and smoked paprika to create the sauce. To assemble the burgers, spread the sauce on the toasted bun halves. Place a grilled portobello mushroom cap on the bottom bun, then add baby spinach leaves and sliced tomatoes. Top with the other half of the bun, and secure with a toothpick if needed. Took a stab at a black bean burger, it worked like a charm 👌 First came the buns - I gelatinized 10% of the flour and made the dough at 80% hydration. For the patties I mashed the beans with some dried chanterelle mushrooms and egg, then gave the mixture a few hours to distribute. A light sprinkle of chia seeds towards the end brought the consistency in just right. For assembly this burger featured some quick pickles in fresh basil, portobello mushrooms, and cheddar cheese. Grilled Portobello Mushroom and Arugula + Avocado + Raspberry Salad Grilled Portobello Recipe: Clean 3 Portobello mushrooms with paper towels, mix following things in a bowl, 1/2 cup of Olive Oil or any other oil of your choice such as grapeseed or avocado, 4 big cloves of garlic minced, 3 table spoons of chopped onions, salt and pepper to taste, 1/3 cup balsamic vinager - I used balsamic glazed vinegar with 1 tablespoon of red wine vinegar, 2 tablespoons of dry basil, 1 to 2 tablespoons of driy oregano, pinch of cayenne pepper. Mix well and in a plate brush marinade on both side and keep it for 45 to 60 mins. Grill it about 4 mins each side at medium to low flame. For salad mix arugula, avocado, raspberry and your favorite dressing and mix well. Add salad to plate and top it with mushroom.
