A tasty and cheesy grits casserole that can be served as a side dish or for breakfast.
Ingredients: 1 cup quick-cooking grits. 4 cups water. 2 cups shredded cheddar cheese. 1/2 cup grated Parmesan cheese. 1/2 cup milk. 1/4 cup unsalted butter. 2 large eggs. Salt and pepper to taste.
Instructions: Warm your oven up to 350F 175C and grease a casserole dish. Bring 4 cups of water to a boil in a saucepan. Add the grits and stir them in. Cook for about 5 minutes, stirring every now and then, until they get thicker. Take the pan off the heat and add the milk, butter, cheddar cheese, and Parmesan cheese. Stir the ingredients together until the cheese melts. Beating the eggs in a different bowl is the next step. Slowly whisk the eggs into the grits mixture as you go. If you want, you can add salt and pepper to taste. Pour the grits mix into the casserole dish that has been greased. This dish should be baked in a hot oven for 30 to 35 minutes, or until it is set and the top is golden brown. Allow it to cool a bit before serving. Have fun!
