Ingredients: 1 lb ground beef. 1 packet taco seasoning. 1 cup diced onions. 1 cup diced bell peppers. 1 can 15 oz black beans, drained and rinsed. 1 cup corn kernels. 1 cup shredded cheddar cheese. 1 cup shredded Monterey Jack cheese. 1 bag tortilla chips. 1/2 cup sliced black olives. 1/2 cup diced tomatoes. 1/4 cup chopped fresh cilantro. Sour cream and salsa for serving.
Instructions: In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat. Stir in the taco seasoning and cook for an additional 2-3 minutes. Set aside. In a slow cooker, layer the ingredients as follows: - Half of the tortilla chips - Half of the cooked beef mixture - Half of the diced onions and bell peppers - Half of the black beans and corn - Half of each cheese Repeat the layers with the remaining ingredients. Cover the slow cooker and cook on low for 1-2 hours or until the cheese is melted and everything is heated through. Before serving, top with sliced black olives, diced tomatoes, and chopped cilantro.
