Ingredients: 1 cup dried lentils, rinsed. 1 onion, chopped. 2 carrots, chopped. 2 celery stalks, chopped. 2 garlic cloves, minced. 1 cup diced ham. 4 cups chicken or vegetable broth. 1 can 14.5 oz diced tomatoes. 1 teaspoon smoked paprika. 1 teaspoon dried thyme. Salt and pepper to taste. Fresh parsley for garnish optional.
Instructions: Put everything in a slow cooker except the parsley. Lentils should be soft after 6 to 8 hours on low heat or 3 to 4 hours on high heat. Check the seasoning and make changes if needed. If you want, you can serve it hot with fresh parsley on top.
