You do not need a pasta machine to shape pasta. Hand made pasta is not perfectly shaped (that's what makes it truly hand made). I was inspired to make Trofie to be paired with my Peso alla Genovese. A twisted traditional pasta shape from the Ligurian Coast. From my Tuscan kitchen, I used Gran Duro Semolina and water to create this wonderful pasta. After allowing pasta to rest, I rolled the dough into tubes and cut off sections as if making gnocchi. I rolled the between my hands creating spirals at the ends of the pasta. The process goes faster with the help of another pair of hands. Boil in salted water for about two minutes.
