At a day-to-day level, I am a preparer and consumer of simple breakfasts. I eat a lot granola bars. I eat a lot of bowls of oatmeal with a scoop of peanut butter stirred in. As a kid, such was my commitment to instant oatmeal packets that my family's breakfast "tradition" for our culture's equivalent to the Feast of the Winter Star became . . . oatmeal. (A notable exception: visits to my grandparents, when my grandfather would make huge batches of cornmeal pancakes arranged in inventive shapes accompanied by a pile of bacon.)
But in the present, given sufficient time on a weekend morning, few things bring me the joy of a large, luxurious breakfast. Or, in terms of the cereal commercials that peppered my childhood and Stardew Valley itself, a complete breakfast.
The complete breakfast recipe consists of three main components: hash browns, fried eggs, and pancakes with a berry and rhubarb compote. I halved the whole thing, which serves four, for two people.
This was, as far as I can remember, my first time making hash browns from scratch. I'm a big fan of breakfast potatoes, both home fries and hash browns themselves, but the process of removing the moisture from the potatoes always seemed like more trouble than it was worth, so I typically buy the frozen, pre-shredded kind.
Not this time.
It was a real task, but draining and tossing the shredded potatoes with cornstarch did result in a crispy and substantial (though not especially photogenic) pair of hash brown patties, and they kept well in the oven while I prepared the other parts of the dish.
The compote came next, with the rhubarb reduced and softened in a saucepan while I prepped some other things. The recipe suggests complementing the rhubarb with salmonberries, which aren't readily available around me, so I went with the listed alternative--another Stardew foraging staple: blackberries.
While the compote cooled, I got to work on the pancakes and the eggs. I usually prefer a cornmeal/flour blend in pancakes, finding that cornmeal can add a textural touch that offsets the doughiness of some all-flour recipes. But these flour-only pancakes fluffed up nicely, helped along by the usual leaveners as well as a bit of yogurt.
The fried eggs were, for me, the most straightforward part of the breakfast equation, tasty but pretty standard.
The final product was a lovely mix of flavors. On the pancakes, the compote offered a good balance of sweetness and tartness, and it complemented the texture of the pancakes. The hash browns, as mentioned, came out well, neither the charred disc or soggy patty I've occasionally ended up with at home. And the eggs, as expected, were lacy and delicious.
As someone who likes a bit of spice and acidity, I did add some hot sauce to the eggs and ketchup to the hash browns, but not before taking a picture of the result as written up in the cookbook. In the end, a long morning in the kitchen, but well worth the outcome.
This vegetarian breakfast casserole has a crispy crust of hash browns under a delicious mixture of eggs, vegetarian sausage, cheese, and vegetables.
Hey there! Tonight, we're going to be switching it up with some sweet paprika. The plan is for 1/4 tsp as well as Parisien Bonnes Herbes, pepper, and asiago and we'll see how things go!
okay i may be fully showing my ass on this hellsite with this one, but i was today years old when i learned that "hash browns" were not , in fact, weed brownies but a fried potato dish (?)...
LISTEN i *was* confused as to why so many people in US-American TV shows were just openly talking about/eating weed when it has been historically quite stigmatized - like that was definitely something that read to me as very odd!!! but i just never really went on to properly figure out why that was the case...
AND ALSO it is a fair leap to make, etymologically. let me explain:
*I* thought it was a shortened way of saying "hashish brownies"

Referring to THESE shredded and fried potatoes as "hash browns" is much less instinctive (apparently, acc. to the wikipedia article, it derives from the french "hacher", but STILL - also fuck french as a principle (light-hearted))
