In the foreground is our Collaboroni pizza and in the background is our Love Supreme (red onion, green peppers, housemade fennel-garlic sausage).
Been meaning to get to this Upper East Side (relative) newcomer, Marinara Pizza, for a while now. It caught my eye when I saw a photo of its Sicilian pepperoni pizza on its website. Then the other day I put two and two together and realized it’s a relatively short trip via the Second Avenue subway extension from my office. So now I can say I’ve traveled the entirety of the new spur, having visited 63rd/Lex, 72nd St, and 86th over the last few weeks for nonpizza activities. ¶
It’s a good slice. Airy and light but crisp and sturdy enough to hold an ample amount of cheese, which seems to be laid down directly on the dough, the way L&B Spumoni Gardens does, giving it that oddly satisfying springy-gummy chew where the cheese has melted into, and become one with, the dough. The sauce was just ever so slightly sweet, which worked well as a foil for the salty pepperoni. Good stuff. I can see why the early online reviews are good. ¶ #hastalapizza 😊🍕✌️

Here’s a pizza we were just goofin’ around with after we’d wrapped up with one of our monthly pizza pop-ups at our host restaurant, EMILY. It’s got pickled jalapeños and banana peppers along with a swirl of ranch dressing. This eventually morphed into our Ranchero pie, which omits the banana peppers.
And here’s another great photo from Ben Hon (of @stuffbeneats & @nycfoodfomo fame on Instagram). It’s the nice bird’s-eye view of our Love Supreme and Collaboroni bar pies.
This is what we’ve named the “Collaboroni.” It’s a testament to the unique relationship with have with the folks at EMILY, the Brooklyn restaurant that hosts our pop-ups once a month. EMILY has on its menu a pizza called the Colony, which features pepperoni, pickled jalapeños, and a drizzle of post-oven honey. The Collaboroni is basically that same toppings combo on a Margot’s Pizza bar pie chassis. It’s a Margot’s X Emily collabo, hence COLLABORONI. You get the picture. 😊🍕✌️
My daughter became friends almost instantly with a little girl at her table in Kindergarten and has been talking about inviting her over almost since the first day of school. “Maybe she can come over to play and Papa can make us pizza.” ¶ Today was their first play date. And Papa made them pizza—a New York–Sicilian style plain pie based on thr @kenjilopezalt recipe on @SeriousEats. ¶ I bought a black steel pan at Bari Restaurant & Pizza Equipment earlier in the week in anticipation. It yielded THE BEST result yet for me with this style and recipe. My other secret weapon is the fact that I give my Baking Steel a good long preheat at 550°F to really jumpstart the bake and make sure the thick crust gets good oven spring and cooks through properly. ¶ Margot gave it “4 thumbs up,” her highest rating. ¶
