First: big fan of the color reads. Second: in Me and Thee, do you think it's telling how quickly Thee switched up to wearing Peach's color so completely after only knowing him a short while? I wonder if Thee is so starved of love and affection that he clings to whatever looks his way. (Not that his feelings for Peach can't be genuine.) In the next episode, he's with his mother and wearing blazing red, which might be her color. Wearing her color to get her attention and love. I only thought of this because in the opening credits it shows Thee with snippets of other distinctly colored suits but Peach is just other shades of blue.

The numbers of Peach's address on his wall outside his house have peaches in them.
And I thought his sister's name was Plum and not Plub, so it would have been Peach and Plum, which would mean the address numbers would have had a peach and a plum in it (*begins sobbing loudly* if you know you know),
Which would have made sense to me since I think everything in this show will be fruit themed like the slippers.
But to your ask about Thee and his colors.
I do think it's telling that Thee quickly wore Peach's blue for the exact reasons you wrote, but beyond the color, it also shows up in the way Thee reacts to Peach caring about him. He looks like he is about to have a panic attack.
When Peach stated that he was worried because Thee hadn't eaten yet, Thee looked freaked out that someone had noticed something, anything, about him. Then, when Peach took off some of Thee's clothing so he would be comfortable in the restaurant, Thee had a mini crisis outside the store.
Because Thee doesn't have friends. He has employees.
In the music video for the show's OST, the entire premise is that Thee is looking for a friend, and he finds Peach.
Peach has already proven to be a great friend.
And even more, he has been shown to be a parent to his sister with the quick "sit properly" comment he directed at her.
Thee's parents have been in Hong Kong most of his life, and he has no friends. He is all alone with just his soaps and his feelings. But when his parents do come in, they make sure to eat at the big table.
So that's what Thee has learned is the way to share a meal with people you care about because that's the way it works, right?
Thee only knows how to care about people through money and power, but Peach is showing Thee what it means to be cared for without controlling someone.
Just in the first two episodes, Thee has made several comments that imply he believes he has done everything to be "worthy" of affection and that he has everything needed to give love, but his sense of all this is warped. Peach constantly questioning him allows him to see that. But it also allows Peach to see something as well.
You mentioned that Thee's quickness to wear Peach's color doesn't mean "his feelings for Peach can't be genuine" and I think that's the point. His feelings are genuine. Thee can be a lonely boy looking for a friend, but that doesn't mean he doesn't genuinely like Peach, which is what Peach keeps missing because he only sees Thee as this crazy mafioso.
Peach is a freelance photographer even though he has job offers to be permanent. Peach stays in playing his handpan even though he has invites to go out with friends and co-workers. According to Peach, he is boring and has nothing to offer, but Thee (and everyone else) thinks Peach is the coolest and craziest kid he has ever met.
Makes sense that Thee would want to play make believe with such a wild dude who is a good friend and great brother.
Because just like the soaps Thee gets lost in, Peach is a nice escape from Thee's real life.
But Thee can only avoid real life for so long before it starts affecting Peach's life too.
So yeah, I think Thee quickly wore blue because he actually likes Peach since Peach is kind, he is caring, he is a great friend, and he is an escape.
Peach is everything Thee is missing in his life. Makes sense he'd love the hell out of him.
