• QUINOA, EGGPLANT, SPINACH BURGER PATTIES • It’s been a while since I posted a salty recipe 😅 Because indeed, I don’t eat just smoothie bowls and desserts! I usually keep my lunch and dinner very simple. On a daily basis I don’t like to spend too much time in the kitchen and always look for something quick and easy. I also prep in advance and those burgers are perfect for that because you can freeze them and keep them for later. • For this recipe I use quinoa. But not regular quinoa, sprouted quinoa. Have you heard about soaking your nuts before eating them? Well for grains and beans it’s exactly the same. Nuts, grains and beans contain inhibitors to protect them and prevent germination until the conditions are perfect. However, when we eat them, their protective agents act as enzyme inhibitors in our bodies and compromise our digestion. Soaking them replicates the perfect moist conditions required for germination and neutralizes these enzyme inhibitors to make them more digestible. In this case, quinoa is already germinated. If you don’t soak, nuts, grains and beans you can experience, poor digestion, gas, and bloating. • INGREDIENTS FOR THIS “HMP” (#healmeplease) QUINOA, EGGPLANT, SPINACH BURGER PATTIES: -1 cup of cooked sprouted quinoa (my fav @trurootsorganic) -1 cup of soaked cooked chickpeas -1/2 cup of cooked and chopped eggplant -1/2 cup of chopped spinach -1/4 cup of tapioca flour -2 chopped garlic cloves -1 tsp of onion powder -1 tsp of paprika -1 tsp of oregano -Salt and pepper • Step 1: In a bowl, mash the chickpeas with a fork and add the rest of the ingredients on top. Combine to form the burger mixture. Step 2: Put 1 Tbsp of olive in a pan and set to medium heat. Step 3: Form individual burger and cook for about 5min on each side until they are golden brown.
