Ingredients: 2 ripe avocados. 1/2 cup unsweetened cocoa powder. 1/4 cup honey or maple syrup. 1 teaspoon vanilla extract. Pinch of salt. 1 cup Greek yogurt. 1 cup mixed berries strawberries, blueberries, raspberries. 1/4 cup chopped nuts almonds, walnuts. Granola for topping.
Instructions: In a blender, combine avocados, cocoa powder, honey or maple syrup, vanilla extract, and a pinch of salt. Blend until smooth and creamy, scraping down the sides as needed. In serving glasses or bowls, layer the chocolate pudding with Greek yogurt. Add a layer of mixed berries on top of the yogurt. Repeat the layers until the glasses are filled. Top each parfait with chopped nuts and granola for added crunch. Refrigerate for at least 1 hour before serving to allow flavors to meld.
