Ingredients: 2 large eggs. 1/4 cup fresh spinach, chopped. 2 slices of paleo-friendly ham, diced. 1/4 cup tomato, diced. 2 tablespoons onion, finely chopped. Salt and pepper to taste. 1 tablespoon coconut oil or ghee for cooking.
Instructions: Beat the eggs until they are well-beaten in a bowl. To the beaten eggs, add diced ham, diced tomato, diced spinach, and finely chopped onion. To taste, add salt and pepper for seasoning. Combine all of the ingredients. In a nonstick skillet, heat the ghee or coconut oil over medium heat. Evenly distribute the egg mixture after pouring it into the skillet. Cook for 34 minutes, or until the bottom is golden brown and the edges begin to set. Using a spatula, carefully flip the omelette, and cook for a further three to four minutes, or until it is cooked through and has a slight crispy edge. Place the omelette onto a plate, tuck it under, and proceed to serve it hot. Savor your Paleo spinach omelette with tomatoes, onions, and ham!
