Ingredients: 2 cans of full-fat coconut milk. 1/2 cup powdered erythritol or other keto-friendly sweetener. 1 vanilla bean, split and seeds scraped out. 1 teaspoon vanilla extract. 1/4 teaspoon xanthan gum optional, for texture. Pinch of salt.
Instructions: In a saucepan, combine the coconut milk, powdered erythritol, vanilla bean seeds, vanilla extract, and salt. Heat the mixture over medium heat until it starts to simmer, stirring occasionally. Once simmering, remove from heat and let it cool slightly. Transfer the mixture to a blender and blend until smooth. Optionally, sprinkle in xanthan gum while blending for a creamier texture. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. Once churned, transfer the ice cream to a freezer-safe container and freeze for at least 4 hours or until firm. Serve and enjoy!
