Ingredients: 1 cup chickpea flour. 1/2 cup water. 1/4 cup diced bell peppers. 1/4 cup diced onions. 1/4 cup diced tomatoes. 1/4 cup chopped spinach. 1/2 tsp turmeric powder. 1/2 tsp cumin powder. Salt and pepper to taste. 4 mini vegan burger buns. Vegan mayonnaise or sauce of choice. Lettuce leaves. Sliced avocado. Sliced vegan cheese optional. Sliced vegan sausages optional. Cooking oil for frying.
Instructions: Chia flour, water, turmeric powder, cumin powder, salt, and pepper should all be mixed together in a bowl with a whisk to make the omelette batter. Bell pepper, onion, tomato, and spinach should be chopped up and added to the batter. Combine well. Put some oil in a nonstick skillet and heat it over medium-low heat. Use a small ladle to drop omelette batter onto the pan to make little omelettes. Turn it over and cook the other side until it's golden brown. Do this for all of the mini omelets. You can toast the mini burger buns for a few seconds on each side. On the bottom half of each bun, put vegan mayonnaise or sauce. Put a lettuce leaf on top of the sauce, then an egg white. If you want, you can add vegan sausages, sliced avocado, and vegan cheese. Put the other half of the bun on top. With a side of fresh fruit or salad, serve your Vegan Mini Omelette Burger Breakfast.
