Ingredients: 2 pounds cherry tomatoes. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon dried oregano. 1/2 teaspoon salt. 1/4 teaspoon black pepper. Fresh basil leaves, for garnish optional.
Instructions: Preheat the oven to 375F 190C. In a large bowl, toss the cherry tomatoes with olive oil, minced garlic, dried oregano, salt, and black pepper until well coated. Spread the tomatoes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until the tomatoes are soft and blistered, stirring halfway through. Remove from the oven and let cool slightly before serving.
