An egg, hash browns, cheese, ham, and vegetable casserole called Farmers Casserole is a hearty and filling breakfast dish. It's great for feeding a lot of people at brunch or breakfast events.
Ingredients: 6 large eggs. 2 cups frozen shredded hash brown potatoes, thawed. 1 1/2 cups shredded cheddar cheese. 1 1/2 cups diced ham. 1/2 cup diced onion. 1/2 cup diced green bell pepper. 1/2 cup milk. 1/2 teaspoon salt. 1/4 teaspoon black pepper.
Instructions: Start by heating the oven to 350F 175C. Prepare a 9x13-inch baking dish by greasing it. Add the eggs to a large bowl and beat them. Add the thawed hash brown potatoes, 1 cup of cheddar cheese, diced ham, onion, green bell pepper, milk, salt, and black pepper. Mix everything together. Put the mix into the baking dish that has been prepared. On top, sprinkle the last 1/2 cup of cheddar cheese. The casserole should be baked in a hot oven for 45 to 50 minutes, or until it is set and the top is golden brown. Before you serve it, let it cool down for a while.
