Ingredients: 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces. 1/4 cup Thai red curry paste. 3 tbsp soy sauce. 2 tbsp fish sauce. 2 tbsp honey. 2 tbsp vegetable oil. 1 tsp ground turmeric. 1 tsp garlic powder. 1/2 cup coconut milk. 1/4 cup creamy peanut butter. 1 tbsp lime juice. Bamboo skewers, soaked in water for 30 minutes.
Instructions: In a bowl, combine Thai red curry paste, soy sauce, fish sauce, honey, vegetable oil, turmeric, and garlic powder to create the marinade. Add chicken pieces to the marinade, ensuring even coating. Refrigerate for at least 2 hours or overnight. Preheat the grill to medium-high heat. Thread marinated chicken onto soaked bamboo skewers. Grill skewers for 10-15 minutes, turning occasionally, until chicken is cooked through and has a nice char. While grilling, prepare the sauce by mixing coconut milk, peanut butter, and lime juice in a saucepan over low heat. Stir until smooth.
