This is a tasty recipe for flatbread pizza with a zesty tomato salad, crispy chorizo, and creamy queso fresco. Great for a quick and filling meal!
Ingredients: 4 flatbreads. 8 oz chorizo sausage, thinly sliced. 1 cup queso fresco, crumbled. 2 cups cherry tomatoes, halved. 1/4 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1 lime, juiced. 2 tbsp olive oil. Salt and pepper to taste.
Instructions: Preheat your oven to 400F 200C. Place the flatbreads on a baking sheet and bake for 5 minutes to crisp them up slightly. In a skillet over medium heat, cook the chorizo slices until they are browned and crispy, about 4-5 minutes per side. Remove from heat and drain on paper towels. In a mixing bowl, combine the halved cherry tomatoes, chopped red onion, cilantro, lime juice, olive oil, and season with salt and pepper. Toss to combine and set aside. Take the crispy flatbreads out of the oven and top them with the cooked chorizo slices and crumbled queso fresco. Return the topped flatbreads to the oven and bake for an additional 3-4 minutes, or until the cheese starts to melt. Remove from the oven, top with the tomato salad mixture, and serve immediately.
