A smooth and warm potato soup made with cheese, bacon, and chives that is easy to make in a slow cooker.
Ingredients: 6 potatoes, peeled and diced. 1 onion, diced. 3 cloves garlic, minced. 4 cups chicken broth. 1 cup water. 1 cup heavy cream. 1 cup shredded cheddar cheese. 1/2 cup cooked and crumbled bacon. 1/4 cup chopped chives. Salt and pepper to taste.
Instructions: In a slow cooker, mix together diced potatoes, onion, garlic, chicken broth, and water. If you set the setting to high, it will take 34 hours, but on low, it will take 68 hours. Puree the soup with an immersion blender or a regular blender, one batch at a time. Add cream cheese, cooked bacon, and heavy cream. Add pepper and salt to taste. For another 30 minutes, cook on low until the cheese melts and the soup is hot all the way through. Serve hot with chopped chives on top.
