Sorry not sorry that this is becoming a bread-stagram of late. I present my first ever sourdough loaves!! Last week my sourdough starters that I had inoculated with the peach yeast water from my mom and her wife's backyard peaches were finally ready to bake with! I had split the original into two, one I was feeding with AP flour and one with Whole Wheat. I decided to split a 40% Whole Wheat flour and 60% AP flour loaf and bake half with one starter and half with the other, keeping all other factors the same! SCIENCE!! I got a better rise and oven spring out of the Whole Wheat flour, maybe because they were more juiced up?
