Heather's Dish makes a simple but tasty vegetable salad that is grilled over a BBQ. The fresh zucchini, colorful bell peppers, cherry tomatoes, and red onions show off their natural goodness. This colorful salad is great for a barbecue because it is seasoned with a mix of herbs and spices.
Ingredients: 2 zucchinis, sliced. 1 red bell pepper, diced. 1 yellow bell pepper, diced. 1 cup cherry tomatoes, halved. 1 red onion, thinly sliced. 2 tablespoons olive oil. Salt and pepper to taste. 1 teaspoon garlic powder. 1 teaspoon dried oregano. 1 teaspoon smoked paprika.
Instructions: Set the broiler on your grill to medium-high heat. Put the red and yellow bell peppers, cherry tomatoes, red onion, and zucchini in a large bowl. Add the olive oil and toss to coat. Add salt, pepper, garlic powder, oregano, and smoked paprika to the vegetables to make them taste better. Toss until everything is covered. Alternate the colors of the vegetables on the skewers to make a colorful presentation. Place the skewers on a BBQ broiler that has already been heated up. Cook for 8 to 10 minutes, turning them over every so often, until the vegetables are charred and soft. Take it off the grill and let it cool down a bit. Place the vegetables that have been grilled on a serving platter. If you want, you can add more olive oil and serve. The grilled vegetable salad is great as a side dish or as a light main course. Serve it warm.
