Vegan Hedgehog Slice
The hedgehog slice has come out So Good. I wonder if any will make it to Christmas Day?

Hedgehog body:
- 250g unsalted butter, chopped
- 395g can sweetened condensed milk
- 2 x 250gs pkt sweet plain biscuits (Marie or Nice bikkies)
- 30g (1/4 cup) cocoa powder
- 45g (1/2 cup) desiccated coconut
Icing:
- 250g Baking Milk Chocolate
- 2 tsp cooking oil (canola or coconut oil)

Grease and line the base of a 16 x 26cm slice pan
Crush the two packets of biscuits until there is a mix of fine and chunky crumbs
Add ¼ cool cocoa powder and ½ cup desiccated coconut to the biscuit crumbs, and mix until evenly combined
In a medium saucepan, put the 250g chopped butter and 395g can condensed milk on medium-low heat, stir to combine
Take butter mixture off the heat when ready, then add the biscuit crumbs to it and stir until combined
Pour mixture into the prepared pan, then place in the fridge to cool
To make the icing, prepare a heatproof bowl over a simmering pot of water (do not let the bowl touch the water)
Stir chocolate until the mixture is smooth and melted down
Drizzle the chocolate over the slice and spread evenly, then put back in the fridge to set for 3+ hours

These were surprisingly simple to make, the only tricky part to be careful of is melting the chocolate, but I think you could get away with melting the chocolate however you like as long as you don't burn it 😉
