Here are some headcanons I thought up and usually use myself. There is an NSFW section that contains more suggestive things!
Heimdall is a clean man. He really likes clean things although he isn't afraid of getting dirty.
Heimdall likes to read because book people aren't predictable and boring to him
Heimdall's eyes will change from pink to slightly darker shades when he's angry or having other intense emotions
Heimdall washes his horn and cleans it every day. It's his pride and joy and he treats it as such, as if it's his own child.
Heimdall can sing very well he just hates doing it. Unlike his brother Baldr, who loves singing but can't, he absolutely hates singing. It's too vulnerable, too "weak" for him, he likes to show off but something about singing makes him unhappy.
Heimdall twitches his eyes whenever overwhelmed. It's an involuntary action, he gets too stressed or too angry his left eye starts twitching.
Heimdall rides on Gulltoppr every morning and every night before bed because it calms her down. Otherwise, she will not rest.
Gulltoppr is a girl, and he treats her like a princess. Though it may seem that she's treated badly, especially with the kick during his boss fight — Heimdall does love her, more on the kick in the next headcanon.
Heimdall is extremely impulsive when it comes to appearing cruel. This is not because he wants to be, he is cruel because he forces himself to be to impress and uphold his father. As such, his body will move before he thinks and does any action to solidify to himself that he is who he acts as.
Heimdall loves food but he also doesn't like eating much. Textures, squishiness, and issues with eating for appearance purposes (which is an issue he deals with every day) all stop him from enjoying the act of chewing and swallowing. He does love tasting things though.
Heimdall loves using his hands. Gesturing, grabbing, drumming. It's his favourite tool, it makes him feel in control.
Heimdall sighs a lot while rolling his eyes. It's due to him finding everyone around him either completely useless or is exasperated by the situation.
Heimdall likes doing everything himself and doesn't use maids or helpers. This way, he can make sure everything is done correctly, on time, and that he has a way to actually have a hobby outside of watching — he does not consciously think this, though.
Heimdall knows how to use bows, but because Odin called it "weak" or alluded to it he immediately stopped.
Heimdall braids his hair himself. He is too particular about it to actually let anyone else do it.
NSFW SECTION MDNI
Heimdall likes to grab necks. Not necessarily chocking, just softly gripping. He likes the heartbeat he feels and the control it gives.
Heimdall doesn't take his clothes off, its too vulnerable. It makes him feel like he is losing his only mode of control, his eyes and ability to prevent touch.
Heimdall doesn't like being touched at first. That takes time, in the beginning it's a huge turn off, but, after a while he let's himself relax and feel comfortable with his partner. Then, he turns into one touchy man.
Heimdall does after care extremely in depth. He will not leave his partners side until they are well. If he doesn't know them he wouldn't bother.
Heimdall himself requires after care since he is really sensitive and vulnerable afterwards he just never admits it.
-Comes off as a tsundere yandere, its kinda scary when he likes you and pretending like he doesn’t
-Bullies the shit out of you
-Makes fun of you all the time :(
-Will especially make fun of your body
-if you’re skinny: he’ll call you boyish and asks if you’re really a woman and how maybe he should “check”
-if you’re chubby: he’ll call you a cow, *his* cow and will make disgusting inhumane comments about your tits
-No one else is allowed to make fun of you though (besides Odin, sorry)
-He caught some helmet-head talking about your body in a derogatory way (probably to impress Heimdall), Heimdall proceeded to beat the shit out of them and make them get on their hands and knees and apologize to you
-Will want to brand you, originally wanted to do it with an iron but other Aesir started to judge him and Odin told him to chill out… so Odin gave him a magical seal that can act like a brand (inspo pics at the end of what that brand would look like)
-His favorite thing is to watch you, both when you know and don’t know that he’s watching you
-Heimdall likes to surprise you while you’re busy and you least expect it, when you just used the bathroom and are leaving? You open the door to his purple eyes calling you disgusting.
-Why does he treat you like so? It’s because you’re a temptress.. purposely doing what you do to seduce him. How does it feel? Do you feel good knowing you have the Harold of Ragnarök wanting you? You’re disgusting for dressing like a whore but *fine* he’ll treat you like one
He has no friends (I know this is pretty obvious but listen) and although he is very selfish to accept it, he sometimes feels lonely.
Because of the amount of time that he spends alone on the wall, he started to talk with himself.
Thúrd one time caught him talking alone in his room, she walked away laughing. Since that day Heimdall only talks alone when his sure he's 100% alone.
He has a great respect and admiration for the all-fathers, he always does everything which is up on his hand to help him.
He kinda needs the all-fathers approval, he does not have anything besides that. I mean, he has no friends, mostly people don't really like him and I don't see him having a great interest in painting, writing or anything apart of doing tasks for the all-fathers.
I think he tried to learn something like painting or playing an instrument. But you know these things really needs a lot of time and practice. Heimdall has the time, but not the patience. When he tries something, he really gets pissed off when he's not perfect at it on the first trial.
When Atreus came to Asgard and he suddenly had all the attention of the all-fathers, Heimdall was really jealous, not mad. He wanted to recieve the same attention as Atreus.
He is a very jealous person, mostly because he is alone and doesn't know how to keep or even make a friend. So if he has a friend, he will probably be very, very jealous with everyone, although if they're only friends.
I'm very sure that he has problems to control his powers, sometimes he can't avoid reading everyone's mind and thats really annoying.
He avoids places with a lot of people because he finds overwhelming when he hears a lot of people thoughts at the same time.
Sometimes when he is talking with someones he answer to the thoughts of the person, let me explain with an example:
H: That's an stupid question.
X: But I haven't said anything.
H: Then, that's an stupid thought.
He has normalized this situations in his life but he really hates when it happens.
He doesn't really care about what others thinks or says around him, he doesn't overthink everything because he finds it usleess. Why he should care about others stuff?
So Heimdall, huh ! Ever think of him? I do ! Way too much, and currently where I’m at (with a dear, dear friend of mine) is a Fix-it AU where Heimdall ends up living ! (Spoilers oncoming with the explanation of it all—as well as warnings for a) canon typical voilent and b) discussions of Trauma)
In the spirit of keeping it short;
The idea with this AU is that instead of dying in his fight with Kratos, once he gets his arm blown off, Heimdall doesn’t get the chance to summon his bifrost arm and eventually Kratos leaves him on the floor of the arena and stalks off and—too terrified of how Odin will react to the fuck up to end all fuckups bc it was his one job, after all—he flees into the forests of Vanaheim
Anyway; he ends up at Freyr’s camp and eventually Sindri’s house, where (so fucking slowly and painstakingly, might I add) he ends up “befriending” the Gang (Atreus saw smth in him and they all trust Atreus) but in this friendship of sorts phase he gets new armour made for him, and finally, finally takes his hair out of that hairstyle (which I fully believe he hated, and which gave him headaches) and the biggest change he could made to distance himself from Odin and Asgard; was changing his hair
But leon ! You’re probably (not) saying, that doesn’t look a lot like Heimdall? Yes ! I think he’d fully want to distance himself from who he was because oh how miserable that man is, and a completely different hairstyle was needed for that ! At first your quiteness was utterly boring to Heimdall. Just another person with no personality whom he will quickly forgot about. He was treating you like he treat everyone else, but you didn't act like the others. Later it was pretty obvious to him that you was shy little asgardian and maybe then he started to actually think that's cute
Heimdall just loves teasing you. Seeing you blushing like crazy and acting all nervous was more fun (in a positive way) then making those weak Einharjar angry. When his teasing become uncomfortable to you he will immedietly stop. He don't want to hurt you in any way, but also don't expect him to loose his attitude
When you have any problem in settle some matter or talking to someone just ask Heimdall for help. He's one confident asshole and will help you with anything. He understand your struggling and won't shame you for being shy (maybe he would tease you a little about it)

Very protective! If some mad man tries to upset you or raise hand on you-- Well, I hope they had good life because your Aesir lover is on his way to beat the shit out of them
Heimdall would respect your boundaries. You're unique and special to him among all Nine Realms. Instead of being hot-headed, loud and brainless you're calm, but honest and open-minded. He loves being by your side and cuddling. You are always here to listen to him and you can count on the same from him. Of course he's still being him, but he would try to make you feel good around him as much as possible.

The two of you can't stand each other.
Whenever you two are in a room, it'll be constant bickering, and will always end up with you destroying half of the room trying to fight him because you are frustrated at his endless comebacks.
The einherjar are scared of doing missions with both of you on the team.
That's saying something.
Needless to say, the All-father had to ban you two from being within sight of each other.
You often wonder how you ended up in his bed, considering he's an obnoxious little prick.
It's purely physical, at first.
Almost like you were taking all your frustration and anger out on each other.
There were a lot of growling.
And biting.
And scratching.
And choking.
Not in that particular order.
It would be no surprise that Heimdall has a daddy kink.
But what about mommy kink?
You are not sure how it all started, but it's something you do often now.
You'd tie him up, straddle him, look down at him.
Your hand reaches to the back of his head, fingers dig into his braids, and yank- so he exposes his neck to you while he hisses.
"You're mine" you say, watching his pupils slightly dilate, grimace melt into a smirk.
"Yes mommy."
His breath hitches feeling your teeth on his throat...
And of course you call him pretty boy.
After you two are together and is publicly known, you start calling him that outside of your bedrooms.
It's not every day you get to see him flustered, you gotta take whatever chance you can get right?
Though you'd learn not to push his buttons too much, otherwise he'd have you at a corner of the hall behind some barrels while everyone else is drinking, and boy he does not hold back.
Heimdall has no swordsmanship skills whatsoever... why you may ask? Because he was that cocky with his foresight that he never saw the need to train. Boy be using Gjallarhorn to bat people away, he has no clue what he's doing.
Heimdall is impeccable about his appearance. He spends hours grooming himself because the thought of dirt and being disheveled links in his mind to failure to stay untouched (see scene where Atreus' gets dirt on Heimdall and Heimdall gets PISSED because he failed to prevent that happening).
Speaking of hair, he wears that many braids because of him always being on the wall to stay away from people. The wind messes his hair up too much and he has to have it that way, only ever unbraiding it when he's by himself and in his house on top of the wall.
He also lives on top of the wall, well away from everyone because mentally he can't stand to listen and hear everyone's intentions all the time. Odin kept him on the Great Lodge when he was young to expose Heimdall to a lot of the horrors of people's intentions, only granting him the peace on the wall when Heimdall was blindly faithful and loyal to every word Odin said.
He prefers animals because they have pure intentions. He can't read their minds like Atreus, but he knows their intentions and that's enough for him to find refuge in their presence.
He did care for Gulltoppr, but much like the love he was given from Odin, it's only conditioned on usefulness. He would have mourned Gulltoppr if he lived in his own time but that would have been conflicted with his own understanding of love.
Heimdall has never had a drink. It's beneath him and he associates it with being neglecting his duty. He cannot impair his mind as he is ever protecting Asgard at all times. (Therefore, he's a lightweight if he ever tried to drink).
Heimdall is arrogant and distrustful because he is lonely and cannot socialise with people due to his foresight. He perceives every intention people have, their intent to leave a conversation with him, their boredom talking to him, to be their only truth and therefore concludes everyone despises him. This makes him who he is today, the known asshole of Asgard who no one wants to be around because he shuts everyone off first to avoid feeling hurt by them.
Heimdall does have tattoos, though they weren't tattooed on him. His magic presented them on his skin and they are definitely golden in colour.
He is part Vanir. His mother's were the Nine Sisters but Odin has made Heimdall unaware of this fact and hid his past from him. This was to ensure Heimdall was only ever loyal to Odin and Asgard.
Or he's part Jotunn as someone has pointed out. Which is deliciously angsty in my opinion.
