So today we have curry for dinner, and it’s not a turkey one! Meals like that are good for you, you can put in as many veg as possible and then is even better.
To start you need meat, veg, spices and a bit of time.
Start with chopping everything. Then brown the meat, remove to the bowl and fry onions in the leftover fat. If you use lamb, you don’t need to add any fat at all, if you use chicken or other stuff then you need some oil.
Remove onions to the bowl, and fry up carrots, parsnips and chickpeas. Remove them to the bowl and add spices to the pan. I used fenugreek, turmeric, ground coriander and cumin. While the spices are frying add chopped ginger, garlic and chilli.
To that you need to add some water and then return everything to the pan. Simmer for approx 30 min. Then add tomato puree or can of plum tomatoes. I prefer puree, as it makes the sauce thicker. Simmer some more. Serve with rice and some nice greens. I fried up okra with slices onion and spring greens, with a dash of soy sauce and bit of fenugreek for flavour.
