These Oreo Surprise Cupcakes are a delightful treat for any occasion. They have a hidden Oreo cookie at the bottom and are topped with a creamy cookies and cream frosting. Perfect for Oreo lovers!
Ingredients: 1 box of chocolate cake mix. 24 Oreo cookies. 1 cup milk. 1/2 cup unsalted butter. 4 cups powdered sugar. 1/4 cup cocoa powder. 1 tsp vanilla extract. 1/2 cup heavy cream. 12 additional Oreo cookies for decoration.
Instructions: Warm up the oven to 350F 175C and put paper liners in a cupcake pan. Follow the directions on the package to make the chocolate cake mix. In the bottom of each cupcake liner, put an Oreo cookie. Cover every Oreo cookie in the liner with the chocolate cake batter that you have already made. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick inserted into the middle comes out clean. On a wire rack, take the cupcakes out of the oven and let them cool all the way down. Beat the unsalted butter in a bowl until it's smooth. Add the powdered sugar and cocoa powder one at a time, mixing well after each addition. Add the milk and vanilla extract and keep beating the frosting until it is light and fluffy. Whip the heavy cream in a different bowl until stiff peaks form. To make a cookies and cream frosting, gently fold the whipped cream into the chocolate frosting. Put cookies and cream frosting on top of each cupcake after it has cooled. You can pipe or spread it on. Add one more Oreo cookie to the top of each cupcake for decoration.
