These cupcakes in soft pink and navy blue are not only beautiful to look at, but they also taste great. Great for parties with a theme or for special occasions.
Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 teaspoons baking powder. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1/2 cup whole milk. Pastel pink food coloring. Navy blue food coloring. Cupcake liners.
Instructions: Preheat your oven to 350F 175C and line a cupcake pan with cupcake liners. In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set aside. In a separate bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Gradually mix in the dry ingredients and the milk, alternating between the two, beginning and ending with the dry ingredients. Mix until just combined. Divide the batter into two separate bowls. Add pastel pink food coloring to one bowl and navy blue food coloring to the other. Mix until you achieve your desired colors. Spoon the pink and blue batter into the cupcake liners, alternating colors in each liner to create a marbled effect. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Remove the cupcakes from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Once the cupcakes are completely cool, you can frost them with your favorite frosting in matching pastel pink and navy blue colors. Decorate as desired and enjoy your pastel pink and navy blue cupcakes!
