@hobo-logical, I wouldn't cook kangaroo anything more past this point - easily achieved by frying in a moderately hot pan for...dunno, 1-2 min depending on the fillet cut, then wrapping in foil and letting it rest for the double the time or a bit longer.

The accompaniments were celeriac puree (no, not potato mash although it looks the same!), fried portobello mushrooms, sauteed and oven-roasted kale, and a dollop of grated fresh horseradish mixed with butter.

The problem with the most shop-bought kangaroo is that even the fillet is cut into small pieces - like a rabid dog tearing into it, and I don’t know why! Back in Adelaide Central Market there was a lovely stall that sold kangaroo fillets whole - neat and intact and absolutely beautiful... So cooking these frenziedly cut pieces in infinitely more difficult than cooking regular size neat cuts. Bleh!

I am sure there is some - try Coles even! But do cook them carefully if you do - nothing worse than dry overcooked roo...

I'm in Vic and the roo fillets pictured would be around $7-8 I LOVE roo when cooked right it has so much more flavour than beef or lamb and is much cheaper (here at least; lamb is so damn expensive)

Really? How much per kilo? These were just from a supermarket so not even speciality butcher, and were around $21/kilo - but this is inner Sydney so... But yeah, roo and lamb are our fav meats too.

Thanks ! I’ll look up the best ways to cook it and give it a try :) There’s always some in the gourmet section of most...

Let me know how it goes! Really, my view is that the best approach for most meats is to KISS (”Keep It Simple Stupid”) - no fancy marinades or rubs, just salt and maybe pepper... That lets the meat’s natural flavour to come through. If the dish is focused on meat, naturally - if it is focussed on curry or spices, that is another thing.

We just finished the meal, I’ll post some pics!

Hmmm I'm not sure you read the post all the way through? Because the point of it is literally to STOP "doing nothing"; they're trying to form a campaign to spread more awareness of the (readily available) information about D&D's grievous fuckery which the media has been too complicit in ignoring these past few years, as well as rallying for better showrunners for the inevitable spinoff series. Also, this guy is not just some rando "hater" -- he's actually an admin at the Game of Thrones Wiki. His videos (which I have been reblogging) are incredibly well-researched and thought out and shed some very interesting perspective on how and why the show has become what it is. The author is a medieval historian, so his work feels very academic.

The objective is to move BEYOND the shit that I do -- i.e. screaming into the internet void, LOL -- and channeling it into actual decisive ACTION. I personally find that a worthwhile cause to get behind. If it's not your own cup of tea, then that's fine too, LOL.
