Ingredients: 1 1/2 lbs baby potatoes, halved. 1 cup fresh cranberries. 2 tablespoons olive oil. 1 tablespoon maple syrup. 1 teaspoon ground cinnamon. 1/2 teaspoon ground cumin. 1/2 teaspoon paprika. Salt and pepper to taste. Fresh parsley, chopped for garnish.
Instructions: Start by heating the oven to 400F 200C. Put the baby potatoes and fresh cranberries in a large bowl. Add the olive oil, maple syrup, cinnamon, cumin, paprika, salt, and pepper. Toss the food until it is well covered. Place the potato and cranberry mix on a baking sheet that has been lined with parchment paper. Put the potatoes in an oven that has already been heated up. Roast them for 25 to 30 minutes, or until they are soft and golden brown. Stir them every 15 minutes to make sure they cook evenly. After roasting, take the food out of the oven and sprinkle it with chopped fresh parsley right before serving.
