These Crunchy Chickpea Roasted Potatoes are a delightful vegan dish that combines the crispy texture of roasted potatoes with the protein-packed goodness of chickpeas. Flavored with aromatic spices, they make a satisfying and nutritious side or main dish.
Ingredients: 4 medium potatoes, washed and diced. 1 can chickpeas, drained and rinsed. 2 tablespoons olive oil. 1 teaspoon garlic powder. 1 teaspoon paprika. 1/2 teaspoon cumin. Salt and black pepper to taste. Fresh parsley for garnish optional.
Instructions: Turn on the oven and heat it up to 400F 200C. Add diced potatoes and chickpeas to a large bowl. Add olive oil, garlic powder, paprika, cumin, salt, and black pepper. Toss the potatoes and chickpeas until they are well coated. Place the chickpeas and potatoes that have been seasoned in a single layer on a baking sheet. After the oven is hot, roast the potatoes for 25 to 30 minutes, stirring them once or twice, until they are golden brown and crispy. When it's done, take it out of the oven and, if you want, sprinkle it with fresh parsley. Enjoy while hot!
