I believe that some of the literature that my father was given... that he had been looking over prior to... everything, it spoke of it. I do recall reading upon its method. And I must say... it is a rather clever solution and potentially well-suiting given what much of the landscape it.
But, it is very involved as a process.
Equipment. Power needed. Checking the quality of the solution fed to the plant roots. Safeguarding against disease that may propagate and spread more easily in it. Cleaning parts of the equipment.
But maybe that is not quite so significant an issue any further. We now have the numbers. Some desperately seek a task to consume time. In this, the unused spaces can easily be leveraged to suit these needs. A synergy between your suggestions.
Those could indeed be promising. I have not thought about them as a crop, but it does bear some consideration.

Food production is especially critical now albeit not just because of the greater population present, in the Tearless city and Dirtmouth because of that matter regarding the City of Steel... but because of whatever has elapsed in Kingdom's Edge. /
