Slowly cooking tender, flavorful chicken in a savory-sweet balsamic sauce makes for an easy and delicious meal.
Ingredients: 4 boneless, skinless chicken breasts. 1/2 cup balsamic vinegar. 1/4 cup honey. 1/4 cup soy sauce. 3 cloves garlic, minced. 1 teaspoon dried oregano. 1/2 teaspoon dried basil. 1/2 teaspoon dried thyme. 1/4 teaspoon crushed red pepper flakes. Salt and pepper to taste. Fresh parsley for garnish optional.
Instructions: In a small bowl, whisk together balsamic vinegar, honey, soy sauce, minced garlic, dried oregano, dried basil, dried thyme, crushed red pepper flakes, salt, and pepper. Place chicken breasts in the slow cooker and pour the balsamic mixture over them, making sure to coat them evenly. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is tender and cooked through. Once cooked, remove the chicken from the slow cooker and shred or slice it. Serve the chicken with the balsamic sauce spooned over the top. Garnish with fresh parsley if desired. Enjoy!
