Savor the delectable taste of homemade Ferrero Rocher chocolates, which feature a smooth milk chocolate coating, a crunchy wafer, and a creamy hazelnut center. These delicious candies are appropriate for any celebration.
Ingredients: 200g hazelnuts, roasted and peeled. 200g milk chocolate, chopped. 200g Nutella or hazelnut spread. 100g crushed wafer cookies. 100g milk chocolate, for coating. 50g chopped hazelnuts, for coating.
Instructions: In a food processor, pulse the roasted and peeled hazelnuts until a smooth hazelnut paste forms. The 200g of chopped milk chocolate should be melted in 30-second increments in a microwave-safe bowl, stirring in between. To the hazelnut paste, stir in the crushed wafer cookies and hazelnut spread. Toss to thoroughly mix in all the ingredients. Once the chocolate has melted, add it to the hazelnut mixture and stir until the mixture is smooth and uniform. Once the mixture has firmed up enough to handle, cover the bowl with plastic wrap and place it in the refrigerator for about an hour. Using tiny amounts of the mixture, form the mixture into balls the size of hazelnuts, centering each ball with a roasted hazelnut. Put the hazelnuts, chopped, onto a plate. Use the microwave to melt the last 100g of milk chocolate. Once the chocolate has melted and covered all of the hazelnut-filled balls, roll them in the chopped hazelnuts to coat the outside. To set the chocolate, place the coated balls on a tray covered with parchment paper and refrigerate for a further half hour. Enjoy your homemade Ferrero Rocher once it has set!

Maple Balls Ingredients: 7 oz. sweetened condensed milk (half a can) 1/4 cup softened butter 1 tsp vanilla extract 2 1/2 tsp maple extract 2 tbsp maple syrup 1/4 tsp salt 3 1/2 cups powdered sugar (more or less as needed) 3/4 cup chopped walnuts (divided) 2 cups chocolate chips Directions: Make the dough: In a large mixing bowl, use a mixer to beat together the sweetened condensed milk, softened butter, vanilla extract, maple extract, maple syrup, and salt. Gradually add the powdered sugar, 1/2 cup at a time, until a dough forms. You may need slightly more or less than 3 1/2 cups. Stir in 1/2 cup of the chopped walnuts. If the dough is sticky, refrigerate it until its firm enough to roll. Shape the balls: Roll the dough into small balls and place them on a baking sheet lined with parchment paper. Refrigerate or freeze the balls until they are firm. Melt the chocolate: Melt the chocolate chips in the microwave on 50% power or in a double boiler. Stir every 40 seconds until the chocolate is smooth and fully melted. Dip the balls: Using a fork, dip each ball into the melted chocolate, letting the excess drip off through the fork tines. Place the coated ball back on the parchment-lined sheet. Top each ball with a piece of the remaining walnuts for garnish. Let them harden: Allow the maple balls to harden completely at room temperature or in the refrigerator before handling or serving.
