I love iced tea but I am too lazy to make it. I have been craving cold drinks and I don’t want to go back to sodas so I thought I would make tropical iced tea. I used two teabags of coconut and pineapple tea. I added a bit of erythritol sweetener. I added lemon and pomegranate seeds. Recipe - Homemade Iced Tea Serves 4 - 6 depending on size of glasses. Ingredients: 1 litre fresh water 4 heaped teaspoons loose leaf English Breakfast Tea (or 4 teabags if you prefer it to loose leaf) Juice of 4 large oranges (OJ from a carton will work but is not as nice. If using this you will need 4 shots which is approx 177ml) 4 tsp sugar syrup/granulated sugar (this is my personal preference to sweetness but you might want to tweak it) Ice cubes Method: Boil the water in the kettle. Put tea into a large jug and pour over boiling water. Leave to brew for 20-30 minutes. Strain out the tea leaves/remove the bags and add the sugar syrup (if using granulated sugar mix it in well so it dissolves completely). At this point you can put the jug in the fridge to cool if you aren't drinking it straightaway. It will last 2-3 days. When ready to serve finish as below. Fill glasses with ice and pour over the orange juice dividing equally among the glasses. Pour over the tea and serve. The brew time is how I like my tea but you can switch it up to match your tastes. I find anything less than 10 minutes in this recipe is very watery and over 40 will need to be diluted with extra water later as it gets very intense!
