Horns of Plenty by Howard Stanbury

This post is a memory of summer for me. While winter may be restorative, fall charming, and spring inspiring, summer has always been my favorite season for it's plethora of available fresh, local produce. This year was the first time I had considered experimenting with corn in ways I hadn't attempted previously. From fava bean, corn, and cherry tomato succotash to cold corn soup, the sunny stalks colored my summer palate a cheerful yellow through the season. Have you ever tried your corn raw? SO unbelievably sugary and delicious.
Additionally, the months stretching from July-September in the Hudson Valley are optimal mushroom foraging time. Since I have been a small girl, my father has shared his top-secret mushroom "spots" with me across the river deep in the Catskill mountains. I can liken our excitement of coming across a flash of vidid orange chanterelles nestled in the heat-keeping leaf bed of these slumbering mountains to 19th century American miners striking gold in California. What richness.
For this particular dish I was inspired dually by the bright, sweet flavor of summer corn and the spicy, rich earthiness of orange and black chanterelles (also known as horns of plenty). While I don't typically pair fish with mushrooms (I think of one as fresh and saline and the other as piney and deep) I felt that the corn and coconut puree could somehow bridge the gap into a happy pairing. And I was right. This is by far one of my favorite dishes I have cooked this past year. Now in the middle of January, I can look back fondly on this summery combination and be reminded of the warm months that are returning to me just around the corner.
Gotta a sad tune to it that makes me depressed
