This Loaded Summer Veg Burger with Fried Egg is a delicious and satisfying summer meal. Packed with grilled vegetables, a perfectly cooked fried egg, and a tangy balsamic mayo, it's a burger that celebrates the flavors of the season.
Ingredients: 4 whole wheat burger buns. 4 large eggs. 4 slices of cheddar cheese. 2 cups of mixed greens lettuce, spinach, arugula. 1 large tomato, sliced. 1 cup of thinly sliced cucumber. 1 cup of sliced red onion. 1 cup of roasted red pepper strips. 1/2 cup of sliced black olives. 1/4 cup of fresh basil leaves. 1/4 cup of mayonnaise. 2 tablespoons of Dijon mustard. 2 tablespoons of olive oil. 1 tablespoon of balsamic vinegar. Salt and black pepper to taste.
Instructions: Preheat your grill or stovetop griddle over medium-high heat. In a small bowl, whisk together the mayonnaise, Dijon mustard, and balsamic vinegar. Set aside. Split the whole wheat buns and lightly toast them on the grill. Remove and set aside. Brush the grill grates with olive oil and grill the sliced vegetables red onion, cucumber, roasted red pepper until they are charred and tender, about 2-3 minutes per side. Season with salt and black pepper. Remove and set aside. Cook the eggs on the grill or griddle until the whites are set and the yolks are still slightly runny, about 2-3 minutes for sunny-side-up eggs. Place a slice of cheddar cheese on each egg during the last minute of cooking to melt the cheese. To assemble the burgers, spread the prepared mayonnaise mixture on the bottom half of each toasted bun. Layer the mixed greens, tomato slices, grilled vegetables, sliced black olives, and fresh basil leaves on top of the mayonnaise-covered buns. Place a fried egg with melted cheddar on each burger. Top with the other half of the toasted bun. Serve immediately, and enjoy your Loaded Summer Veg Burger with Fried Egg!

🛒 Ingredients:
4 chicken legs (thighs & drumsticks)
4 sausages of your choice
2 tbsp yellow mustard
1 cup BBQ sauce
1 tbsp honey
1 tbsp apple cider vinegar
Salt & pepper to taste
🔥 Directions:
Preheat your grill to medium heat.
In a bowl, mix mustard, BBQ sauce, honey, and vinegar.
Season the chicken and sausages with salt and pepper.
Generously brush the meat with the sauce.
Grill for 20–25 minutes, turning occasionally and brushing with more sauce halfway through.
Let it rest for a few minutes before serving for juicier results.

Ingredients:
Cookies:
1. 2 cups of flour
2. 1/2 cup cocoa powder
3. 1 tsp of baking soda
4. 1/2 tsp of salt
5. 3/4 cup of brown sugar
6. 3/4 cup of oat milk
7. 1/2 cup of margarine
8. 1/3 cup of applesauce
9. 1 tbs of vanilla extract
Filling:
1.1/2 cup of margarine
2. 3/4 cup of creamy sunbutter
3. 1 1/2 cup of powdered sugar
4. 1 tsp of vanilla extract
Method:
1. Preheat the oven to 375. In a large mixing bowl, combine the dry ingredients for the cookies (flour, coca powder, baking soda, salt, and brown sugar). Whisk together.
2. Add in the wet ingredients- oat milk, margarine, applesauce, and vanilla). Combine until a dough its formed.
3. Scoop about 1 tablespoon of dough into your hands. Form into a ball and then place on a parchments lined baking sheet. Each cookie should be at least 1 inch apart. Flatten them a little bit with fingers or the back of a spoon.
4. Bake in the oven for about 10-12 minutes.
5. When done remove from oven and let them cool for 5 minutes and them transfer them to a wire cooling rack. Let them cool completely.
6. Make filling in a large mixing bowl. Combine margarine, sunbutter, powder sugar, and vanilla. Mix with a rubber spatula or electric mixer until smooth. Set aside.
7. When cookies are completely cool, put a spoonful of filling between two cookies. Do the same for all the cookies. Making cookie sandwiches :)
8. Enjoy!
