In the original, she doesn't address Toothless at all. She apologies to Hiccup. And when Toothless hears her apologize, that's when he stops flying crazy, because he didn't want her to apologize to him, she hasn't done anything to him. But she's bullied Hiccup and Toothless no doubt saw her at least drop the axe on him or yell at him. Hiccup may have told him about her and the others who knows
But regardless, it showed Toothless as an intelligent, thoughtful creature. He knew his friend, the person who helped him fly again, was being mistreated, said "Not on my watch" and did something about it. This Toothless doesn't look or act like he's got a single thought behind his eyes
