About Nordic berries...
Or Confessions of a berry maniac!!!😂(Another old post from my bdsmlr blog - and a bit of a recurring theme...😆)
Now for something completely different! :) I'm just squeezing this post in - I'm in a hurry to start preparing one of His favourite meals: fried veal liver with a root vegetable mash and crushed lingonberries. Just that our Nordic berries are so heavenly: lingonberries, bilberries (not those watery and tasteless blueberries), cloudberries, wild strawberries, rubus arcticus etc (English doesn't even have a name for those celestial things). Just wanted to say this!😅
Today, I felt the urge to reproduce . . . a meal I had in Stockholm before I left. And not only that, have a guest, my wonderful upstairs neighbor Mark. May I present Swedish meatballs on Japanese porcelain. I've made them before but this time turned out especially well. Tricks: Use a stand mixer to make the meatballs. Unlike Italian meatballs, which by habit I handle very lightly like I would a hamburger, Swedish meatballs get the right silky texture by working the proteins in the meat. The Chinese achieve this by mixing their meat fillings all in the same direction, or by lifting and throwing into the bowl. A mixer replicates those moves quite nicely in about a minute. Also, a bit of five spice powder, along with a little nutmeg, allspice and dried ginger, gives just the right flavor. I also finally got the potatoes right - which was simple: I was doing, out of American habit, a stiff mash rather than a silky puree. Just rice the potatoes (I used a food mill), add butter and cream, then a bit more milk until they're the right consistency. Cucumbers were made yesterday (use the "english" ones wrapped in plastic, score with a fork to make them pretty, slice thin, salt, drain the water and then dress with white vinegar, an equal amount water, sugar, salt and pepper. And if you don't live in a dill desert, dill. Add a tomato salad and lingonberry jam, and you have a meal.

despise your own food. always look at other regions diets with longing. what if we could get like all our vitamins from the FOOD?! on like a consistent basis
