as I see it, there are two options for who saved the coat: 1- Gillenormand had them mend Marius's old coat cause he is desperately trying to please Marius and he's like 'NOOO they destroyed his coat D:', sidestepping the fact that it was already destroyed when it got there. He knows Marius is weird about his clothes in general. 2- Basque or Nicolette, having worked in that house for years, are terrified of not mending that coat and when Marius asks about it, old G does Something Bad

the servants in that house deserve combat pay and even moreso if they saved that coat holy smokes

..which I guess in any case they did, huh? we don't know why but we can be darn sure Gillenormand didn't wash and re-sew that thing
