Another 2 mile meal. Pork chop was pasture-raised Red Waddle pork from over the hill. It was topped with a carmelized red onion, apple, rosemary saute. Served with home-canned green beans with mushrooms and smashed Yukon potatoes. Everything within 2 miles except the mushrooms and onions. Today's canning accomplishments. 3 quarts dill pickles, 2 pints pickled beets, 3-1/2 pints of marinated peppers and 17-1/2 pints of Bruscetta in a Jar. Which is awesome on pizza or tossed with pasta!!!
