Mille Crepe Cake is a delicate and elegant dessert made of layers of thin crepes stacked with layers of sweet whipped cream. It's a delightful treat for special occasions.
Ingredients: 1 cup all-purpose flour. 2 cups milk. 3 large eggs. 1/4 cup granulated sugar. 1/4 teaspoon salt. 1 teaspoon vanilla extract. 2 tablespoons unsalted butter for greasing the pan. 1 cup heavy cream. 2 tablespoons powdered sugar. 1 teaspoon vanilla extract. Fresh berries for garnish. Powdered sugar for dusting. Chocolate sauce optional, for drizzling.
Instructions: Put flour, milk, eggs, granulated sugar, salt, and vanilla extract in a blender. Mix until it's smooth. Take 15 minutes to let the batter sit. Set a crepe pan or nonstick skillet over medium-low heat. Spread some butter around the pan to cover it. Using your spoon, spread out a little crepe batter in the middle of the hot pan and swirl it around to make it thin and even. It's ready when the edges begin to lift and the bottom turns a light golden color. Change the crepe over and cook the other side for an extra minute or two. Take it out of the pan and do it again with the rest of the batter, adding more butter to the pan if needed. Let the crepes cool all the way down. Heavy cream, powdered sugar, and vanilla extract should be whipped together in a bowl until stiff peaks form. Cover one crepe with a thin layer of whipped cream and place it on a plate to serve. Layer crepes and whipped cream on top of each other until you run out of cream or crepes. Make sure to put a crepe on top to finish. Put the cake in the fridge for at least two hours to set. Put fresh berries on top of the Mille Crepe Cake before serving, dust it with powdered sugar, and if you want, drizzle it with chocolate sauce. Cut it up and enjoy!
