A tasty vegan version of traditional carnitas, made with fresh green jackfruit and tasty spices. You can use this simple Instant Pot recipe to make bowls, tacos, or burritos.
Ingredients: 2 cups young green jackfruit drained and rinsed. 1 tablespoon olive oil. 1/2 onion, diced. 2 cloves garlic, minced. 1 teaspoon smoked paprika. 1 teaspoon ground cumin. 1/2 teaspoon chili powder. 1/2 teaspoon dried oregano. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/2 cup vegetable broth. 1/4 cup orange juice. 2 tablespoons lime juice.
Instructions: Cut out the center of the jackfruit and shred the flesh with a fork to get it ready. To heat the olive oil in the Instant Pot, set it to the saut setting. After you add the onion and garlic, saut for about 3 to 4 minutes, until the onion is soft. Add the pepper, salt, and spices, and stir them in. Cook for one more minute. Break up the jackfruit and mix it with the vegetable broth, orange juice, and lime juice. Use a stir to mix. Put the lid back on top of the Instant Pot and set it to high pressure for 5 minutes. After cooking, let the pressure drop naturally for 10 minutes. Then, carefully let go of any remaining pressure. Move the jackfruit to a baking sheet lined with parchment paper using a slotted spoon. For 5 to 7 minutes, or until the edges are just a little crispy, broil in the oven. Take a bite of the vegan carnitas in a bowl, taco, or burrito, and enjoy!
