I don't think it means either of those things and I wouldn't think too hard about it. It was a way to explain Irani's absence from the Rewind -- she really shooting something in London at the time so someone probably just thought they were being clever. At the most, it might indicate that Khushi travels to London alone when she needs to take care of her shop, but that's unlikely given how terrified she is of flying ala Ek Jashn.
I don't think there's much to be gained by trying to analyse Ek Jashn or the Rewind. No one cared about character consistency or deeper meanings, they just made something that shat on the canon and called it a day.

I’m having a hard time following your question -- mostly because you keep referring to “aired episodes” but I have no clue what did or didn’t air in your region.

I understand these questions make sense to you but you have to remember that I can’t read your mind.
By “unedited episodes” I think you’re referring to the IPKKND full episodes on Hotstar. By “aired episodes” you could mean any of the following:
The Star Plus versions originally aired in 2011-12
The lightly edited Hotstar versions of IPKKND
Rabba Ve (Hotstar version with a different name???)
IPKKND Rewind (highly edited fast-forward)
Now, I understand that with Hotstar not being available to you, you’re largely stabbing in the dark about what’s there and how it all hangs together. But you can’t just say “aired episodes” and expect me to magically know what you’re asking about.
And on that note, what does ipkknd rewind actually focus on?
This is the question that confused me. Until here, I assumed you wanted an accounting of how the IPKKND Rewind differed from the full episodes. But here you’re holding the IPKKND Rewind separate from “aired episodes” and “unedited episodes”, which begs the question, what did you actually watch?
Here’s an attempt at an answer, assuming my guess was correct --
The IPKKND Rewind is 109 episodes of approximately 42 minutes duration, totalling just over 4500 minutes of footage. The Hotstar version is 398 episodes averaging 22 minutes (plus some maha-episodes) -- totalling around 9000 minutes of footage.
The Rewind was conceptualised as a way to air a 398 episode serial in a third of the time -- usually reruns take half a year but this format cuts that down significantly. As a result, the Rewind is missing at least half the original footage, but I suspect it’s closer to two-thirds (the Rewind includes special effects in the name of edginess and a few monologues from Arnav in initial episodes).
The Rewind was focussed on Khushi and Arnav’s relationship, which means it lacks much of the character development, comedy, and nuance that makes the serial so special to me. For example, the Rewind frames Arnav’s trip to the dargah as something he just did, having cut the scene where Anjali asks him to go. But the entire point of the serial was that Anjali had called Khushi into their lives.
They also got rid of Jaadu Hai Nasha Hai, which I think is a crime.
Whether it’s worth watching or not is entirely up to you, it depends on what you want from your viewing experience.
Does Arnav tell that khushi has opened her own sweet shop or what exactly is she doing after winning mrs. India according to ipkknd ek jashn?
It wasn’t covered in Ek Jashn, but in the Rewind Arnav mentioned that Khushi’s in London (Southall) setting up a new sweet shop called Devi Maiya Mistaan Gruha London-Wale.

I didn’t watch IPKKND Rewind closely enough to notice but I doubt they’d put the time or money into redubbing it. It looked like they simply edited it together.
ETA: I wasn't very clear haha. By editing I did mean adding silly effects and changing background music (to me that's still editing). I guess what I was trying to say is that I don't see why they'd pay to have episodes dubbed given they were unwilling to even licence certain songs again. I'm not saying I know for sure they didn't dub it, just that I'm not aware they did and I can't see why they would.
